Diet Coke. The surprising hero. As it reduces, it creates a sticky, slightly caramelised glaze without loads of sugar.

Chicken breast. Lean, high-protein, and perfect for soaking up flavour.

Garlic powder. Adds depth and savoury balance to the sweetness.

Onion powder. Brings subtle richness without needing to chop anything.

Paprika. Adds gentle smokiness and colour.

How to Make Diet Coke Chicken

Add the chopped chicken breast to a bowl with garlic powder, onion powder and paprika. Toss well so every piece is lightly coated in seasoning.

Give everything a proper mix so the spices evenly cover the chicken. This helps build flavour before the sauce even goes in.

In a jug, combine the Diet Coke, ketchup, soy sauce, rice vinegar and chilli powder. Stir until fully mixed – it will look a bit fizzy and slightly odd… trust the process.

Heat the oil in a frying pan over high heat. Add the chicken pieces and cook for 5–7 minutes, turning occasionally until lightly golden. The chicken doesn’t need to be fully cooked yet.

Pour the Diet Coke sauce mixture into the pan with the chicken. Keep the heat fairly high so the liquid reduces and thickens.

If it's still too thin, mix a teaspoon of cornflour with a little cold water, stir it into the sauce and simmer for another minute or two until thickened.

Ingredients

  • 500g chicken breast, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1 can (330ml) diet coke
  • 100g ketchup
  • 2 tbsp reduced-salt soy sauce
  • 1 tbsp rice vinegar
  • 1/2 tsp chilli powder
  • 1 tsp olive oil
  • Spring onions, chopped, for garnish

Instructions

In a bowl combine the chicken and ½ tsp of garlic powder, ½ tsp of onion powder and the ½ tsp of paprika. Set aside.

In a jug mix the diet coke, ketchup, soy sauce, rice vinegar, chilli powder and the remaining ½ tsp garlic powder and ½ tsp onion powder.

Heat a frying pan on a high heat and add the chicken. Pan fry for around 5-7 minutes until it starts to turn golden brown. It doesn’t need to be fully cooked through at this stage.

Keep the heat on high and add the sauce. Simmer for about 10 minutes until the sauce has really thickened and is coating the chicken.

Serve with chopped spring onions for garnish.

Are Artificial Sweeteners in Diet Coke Unhealthy?

There's a lot of chatter out there about artificial sweeteners, like the ones found in Diet Coke, being bad for your health.

I've written about this at length in my article on whether Diet Coke is bad for you, but the short answer is no.

The artificial sweeteners used in Diet Coke, such as aspartame have been extensively studied and deemed safe for consumption by numerous health organizations, including the FDA and the European Food Safety Authority.

A review paper in the Regulatory Toxicology and Pharmacology Journal concluded that:

...the studies provide no evidence to support an association between aspartame and cancer in any tissue…..the weight of scientific evidence confirms that, even in amounts many times what people typically consume, aspartame is safe for its intended uses as a sweetener and flavor enhancer…..

Anyone who says otherwise is spreading myths and/or opinions that aren't backed up by science.
