Try this high-protein Diet Coke Chicken for a quick, healthy fakeaway. Simple ingredients and big flavour in just 20 minutes.

Ingredients

  • 500g chicken breast, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1 can (330ml) diet coke
  • 100g ketchup
  • 2 tbsp reduced-salt soy sauce
  • 1 tbsp rice vinegar
  • 1/2 tsp chilli powder
  • 1 tsp olive oil
  • Spring onions, chopped, for garnish

Instructions

In a bowl combine the chicken and ½ tsp of garlic powder, ½ tsp of onion powder and the ½ tsp of paprika. Set aside.

In a jug mix the diet coke, ketchup, soy sauce, rice vinegar, chilli powder and the remaining ½ tsp garlic powder and ½ tsp onion powder.

Heat a frying pan on a high heat and add the chicken. Pan fry for around 5-7 minutes until it starts to turn golden brown. It doesn’t need to be fully cooked through at this stage.

Keep the heat on high and add the sauce. Simmer for about 10 minutes until the sauce has really thickened and is coating the chicken.

Serve with chopped spring onions for garnish.
