Get a large pan properly hot, then add the mince. Break it up and fry for around 10 minutes until it’s deeply browned and slightly crispy. This is where all the flavour comes from—no pale, sad mince allowed.

Push the mince to the sides to make a little well, then add the garlic and ginger. Fry for about 30 seconds until fragrant. Your kitchen should smell ridiculous at this point.

Pour the sauce into the pan, stir everything together, and let it simmer for 4–5 minutes. The sauce will thicken and coat the mince beautifully.

Stir through the grated carrot and spring onions for freshness and crunch. That’s it—done. Serve immediately over rice or however you fancy.

  2. Made this recipe after falling upon it.

    I'm based in the UK - and used a food/calorie tracking app and it came out at almost 800 calories per serving instead of the 273 stated?!
    And that was without adding any rice 🙁

    Any idea how to make it for less than 300 calories per serving as advertised?

  4. Im following a calorie controlled diet and made this today as I was looking for new tasty recipes. It was so easy to make and was beautiful, it was so filling even with my small portion of rice! I will definitely be making it again.

  5. Made this tonight because I’m trying a low calorie diet, I swapped the carrots for green beans and skipped the ginger just because I didn’t have it in the house. (I also swapped chilli flakes for paprika, and your recommendation of brown sugar instead of honey). It was AMAZING! I’m not a cook, I’m normally terrible at making anything but this was an all rounder favourite by me, my fiancé, and my 10 month old son. Really quick and I love a 1 pan dinner. Thanks for sharing!
