Now, I might not be able to transport you to a Caribbean beach (if only!), but with my Jamaican Jerk Chicken recipe, I can certainly give you a taste of tropical paradise. So, tie on those aprons and fire up your BBQ because we're about to embark on a culinary adventure you won't forget. Trust me, you're in for a treat!
What is Jamaican Jerk Chicken?
Jamaican cuisine is a vibrant tapestry of flavours, reflecting its rich cultural heritage. Taino, Spanish, British, African, Indian, and Chinese influences intertwine, resulting in a diverse gastronomy.
At the heart of this culinary treasure trove is the celebrated Jerk Chicken.
The term "jerk" has roots in the Spanish 'charqui', evolving into 'jerky', and finally, 'jerk'. This cooking method originated from the Maroons, escaped African slaves in Jamaica, who seasoned and slow-cooked meat over a fire pit for preservation and flavour.
Today, Jerk Chicken is enjoyed worldwide, its spicy, smoky, and sweet profile embodying the resilient spirit and creativity of Jamaica.
Jamaican Jerk Chicken Key Ingredients
Chicken. Our main player here. This lean meat is a fantastic source of high-quality protein. For this recipe, we're using chicken thighs for maximum flavour but if you want to save a few calories, you can use chicken breast instead.
Jerk Seasoning. An easy-to-find stellar blend of herbs and spices that you'll get in most supermarkets. This quintessential Jamaican mix gives our chicken that spicy, smoky, and sweet flavour. What's more, it's loaded with ingredients like thyme and allspice which are well-known for their health-boosting properties.
Thyme. Thyme adds a subtle, earthy undertone that complements the bold jerk spices, tying together the whole flavour profile.
Pineapple. Pineapple not only provides the zing to our salsa but also loads it up with Vitamin C and Manganese. Plus, it's a fantastic digestive aid. I used frozen but you can use fresh or tinned.
Red Pepper. These vibrant veggies are a treasure trove of vitamins A, C, and B6.
Lime: Rich in Vitamin C and antioxidants, lime juice gives the salsa that extra kick and amps up your immune system.
No doubt, the traditional way of cooking Jerk Chicken is on a smoky barbecue grill, capturing the true essence of Jamaican culture. There's just something about that smoky char and open flame that elevates the flavour to an all-new level.
To grill your jerk chicken, preheat your BBQ to medium-high heat. Place the marinated chicken on the grill, close the lid and let it cook for about 10-12 minutes on each side, or until the chicken is cooked through and has a nice, smoky char.
I suggest you use a meat thermometer when cooking on the BBQ and make sure the chicken reaches 75 °C before serving.
But, don’t despair if you don’t have a BBQ at hand. You can still achieve that delectable Jerk Chicken right in your kitchen. A griddle pan on your hob can simulate the BBQ effect, or you can use your grill. Just keep an eye on the chicken to prevent it from burning.

For the Jerk Chicken:
600gskinless chicken thigh fillets
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1 tbsp soy sauce
1 tbsp lemon juice
5ggarlic, minced
5gginger, minced
2 tsp jerk seasoning
1 tsp thyme
For the Pineapple Salsa:
300g fresh pineapple, diced
1 small red pepper, diced
1 spring onion, finely diced
1/2 red chilli pepper, seeds removed and finely diced (optional)
1 lime, juiced
Handful fresh coriander, chopped
Salt to taste
Instructions
In a medium-sized bowl, combine olive oil, apple cider vinegar, soy sauce, lemon juice, minced garlic, minced ginger, jerk seasoning and thyme.
Mix well to form a marinade.
Place the chicken breasts into the bowl and ensure each piece is well coated in the marinade. Pop it into the fridge and refrigerate for at least 2 hours, or ideally overnight, to let the flavours meld.
Preheat your BBQ or griddle pan on a high heat.
Remove the chicken from the marinade bbq or griddle fry for around 10-15 minutes until the chicken is cooked through (this is an internal temperature of 74o Celsius)
While the chicken is cooking, prepare the pineapple salsa. In a medium bowl, combine diced pineapple, red pepper, spring onion, chilli pepper (if using), chopped coriander, and lime juice. Season with salt to taste and mix well. Cover and refrigerate until ready to serve.
Once the chicken is fully cooked, remove it from the bbq or griddle pan and let it rest for a few minutes. Serve the jerk chicken with a generous helping of pineapple salsa on top.

Jamaican Jerk Chicken Storage Tips
To Store
Both the chicken and the pineapple salsa will store well in the fridge in separate air-tight containers.
To Reheat
Place the chicken in the microwave and zap until it's fully heated throughout.
To Freeze
The chicken freezes well and will keep in an air-tight container in the freezer. I wouldn't freeze the salsa.
FAQs
Can I cook this in the air fryer?
Sure. To turn this into a healthy air fryer recipe just cook at 190°C for 10-12 minutes, then flip them over and cook for the same time on the other side.
Can I use chicken breasts instead of thigh fillets?
Absolutely! Chicken breasts can be used, but bear in mind, they may cook a bit quicker than thighs.
What if I can't find jerk seasoning?
No worries, you can make your own. Combine allspice, thyme, cayenne pepper, ground cinnamon, salt, and black pepper. Adjust the spices according to your taste preference.
How long should I marinate the chicken?
Ideally, for a couple of hours. But if you're short on time, even 30 minutes can help infuse some flavour.
Is the pineapple salsa spicy?
It has a slight kick due to the red chilli pepper. However, it's adjustable. Feel free to omit or reduce the chilli to suit your taste.
Any suggestions for side dishes?
If you're looking for a wholesome meal, serve the chicken with a side of brown rice. Its mild flavour is the perfect canvas for our star dish.
For a lighter, low-carb option, try it with quinoa, a super grain that's packed with protein and fibre.
And let's not forget the power of greens. A simple side salad of lettuce, cucumber, and tomatoes with a light vinaigrette can balance out the flavours beautifully.
