When you think of a chilli recipe you probably imagine juicy beef mince and kidney beans in a thick, tasty, tomato sauce. Correct? Time to mix things up. Let us introduce you to White Chicken Chilli.

We've done a tasty turkey chilli recipe, which was a great success, so this time we've made a delicious white chicken chilli. It's got huge butter beans, sweet corn, yummy chunks of chicken in a delicious sauce. It's a one-pot dish and it's a great option for a casual mid-week healthy dinner.

Our recipe has a whole chilli, and extra chilli powder in it, but if you've got more delicate taste buds then go a little easier on the spice. Also, if you're pushed for time, add in a tablespoon of corn flour to thicken the sauce then you won't need to let it simmer for as long.

 1 tbsp coconut or olive oil
 1 onion, chopped
 1 green chilli, chopped
 3 garlic cloves, chopped
 900 g chicken breast, chopped
 400 g butter beans, rinsed and drained
 170 g sweetcorn, rinsed and drained
 1 tbsp Mexican seasoning
 1 tsp chilli powder
 1 tsp oregano
 700 ml chicken stock

Heat the oil in a large pan on a medium heat and add the onions, garlic, green chilli and fry for around 5 minutes.

Add the chicken and cook for around 5 minutes more or until the chicken is starting to brown.

Add all of the remaining ingredients, reduce the heat to medium/low and simmer, uncovered, for around 1 hour.

Serve and garnish with parsley and fresh chilli (if you like it hot).
