A cheesy, one-pot chicken and rice meal, topped with fresh coriander, ready to serve

Let's be honest. Enchiladas are delicious, but they also require effort. You’ve got to fill, roll, sauce, bake, and then hope they don’t fall apart before they hit your plate. That’s where this deconstructed chicken and rice version comes in.

Imagine all the best parts of chicken enchiladas—the spiced chicken, the smoky tomato sauce, the fluffy rice, the gooey cheese—but instead of faffing about with tortillas, you just chuck everything into one pot and let it work its magic.

This dish is:

✅ Packed with Mexican flavours
✅ Super easy (one pot, one spoon, one happy cook)
✅ Ready in under 45 minutes
✅ Great for meal prep (if you don’t eat it all at once)

Basically, it’s chicken enchiladas minus the effort, plus fluffy, flavour-packed rice. Let’s get cooking!

What is One-Pot Chicken Enchilada Rice?

A steaming bowl of one-pot chicken and rice, topped with melted cheese, fresh coriander, crispy tortilla chips, and a wedge of lime. The dish is rich in Mexican flavours, with a vibrant mix of colours from the golden cheese, red tomatoes, and bright green garnish.

At its core, chicken and rice is a simple, comforting one-pot dish made by simmering chicken, rice, and seasonings together. Different cultures have their own take, but this version? It’s basically an enchilada in disguise.

We’re talking:

🔥 Juicy, spiced chicken

🔥 A smoky, tomatoey sauce infused with garlic, cumin, and paprika

🔥 Rice that soaks up all the enchilada-like goodness

🔥 Melted cheese on top (because, obviously)

It’s hearty, cheesy, and packed with Mexican-style flavours—all without having to roll a single tortilla.

Chicken Enchilada Rice Key Ingredients

Flat lay of ingredients for a Mexican-inspired chicken and rice recipe, including chicken, rice, peppers, cheese, and spices.

Onion. A kitchen staple, onions introduce a depth of flavour and slight sweetness, forming the aromatic base of many savoury dishes.

Peppers. This vibrant vegetable not only adds colour but also provides a subtle sweetness and crisp texture, complementing the overall profile of the dish.

Chorizo. This smoky, spicy sausage infuses the dish with authentic richness and depth, elevating the overall taste with its distinctive profile.

Garlic. An age-old flavour booster, garlic imparts a pungent aroma and robust flavour that accentuates and melds with the other ingredients seamlessly.

Chicken Breast. A lean protein source, chicken breast adds substance to the dish, absorbing the surrounding flavours while offering tender, juicy bites.

Fajita Seasoning Mix. A zesty blend of spices, the fajita seasoning imparts a warm, spicy kick, enhancing the dish's Mexican-inspired roots.

White Rice. Acting as a flavour sponge, white rice absorbs the rich broth and other ingredient essences, providing a hearty base and creamy texture to the dish.

Chopped Tomatoes. These lend a tangy sweetness and a touch of acidity, breaking through the richer elements and adding a saucy consistency that binds the ingredients together.

Chicken Stock. This liquid gold introduces depth and savoury notes, ensuring the rice is flavorful and the overall dish boasts a well-rounded taste profile.

Beans. Whether kidney, black, or mixed, beans introduce a satisfying, earthy depth, enriching the dish with both texture and protein.

Low-fat Cheddar. This cheese adds a creamy, melty element, introducing a touch of indulgence without overwhelming richness, making every bite irresistibly gooey.

Chicken and Rice Storage Tips

To Store

As soon as the rice has reached room temperature, get it into the fridge! This will keep in the fridge for about a day before drying out.

To Reheat

There is a misconception about reheating rice. It's fine. Just make sure you microwave it so it's piping hot. The issue with rice is that when it's left at room temperature a bacteria found in rice produces a toxin which can cause stomach pain and sickness.

To Freeze

Not recommended. Reheating frozen rice often makes it go stodgy and unpleasant to eat. Eating it fresh keeps it light, fluffy and tasty.

Frequently Asked Questions (FAQs)

Can I use brown rice instead of white?

Yes, but it takes longer to cook and needs more liquid. Plan accordingly!

What if I don’t have fajita seasoning?

Mix paprika, cumin, garlic powder, onion powder, chilli powder, salt, and a pinch of cayenne for a quick homemade version.

Can I make this chicken and rice reipce dairy-free?

Yep! Just skip the cheese or use a dairy-free alternative.

Can I use chicken thighs instead of breasts?

Absolutely. Thighs are juicier and more flavourful, just adjust cooking time as needed.

What extra veggies can I throw in to the chicken and rice recipe?

Corn, courgettes, mushrooms, or even spinach would be great additions.

How do I stop the rice from sticking to the pan?

Make sure there’s enough liquid and stir occasionally.

Is this meal spicy?

It’s mildly spiced, but you can add chilli flakes or hot sauce if you like extra heat.
