A traditional Bolognese is actually a very simple recipe and according to Italian chefs, modern versions of the classic dish are ruined with too many ingredients. We've made a couple of slight modifications to an Italian - approved recipe for an easy spaghetti Bolognese. We've used turkey mince in place of beef  just to change things up a bit and to keep the calories down. The result? Probably the best turkey Bolognese recipe you will find.  1 tbsp olive oil
 6 rashers of smoked bacon medallions, chopped
 2 red onions, finely chopped
 3 garlic cloves, pressed
 1 stick of celery, chopped
 1 kg turkey mince
 175 ml red wine
 2 cartons of passata
 2 tbsp mixed herbs
 1 tsp salt
Method
1

Heat a large saucepan over a low to medium heat and add the chopped bacon medallions and cook for a few minutes.

Add the garlic, celery and onions and cook for a few more minutes until they have softened.

Add the turkey mince and cook it until it is no longer pink.

Add the wine and simmer until it has reduced by a third.

Add the passata, mixed herbs and salt and mix through. Cover with a lid and simmer for around 60 minutes until the sauce has thickened.

Once it's cooked, serve with pasta, vegetables and sprinkle with some parmesan.
