If there's one thing the British do well, it's a good pie. And this high-protein chicken and leek pie proves you don't need mountains of butter, a double pastry crust or half a tub of cream to make something ridiculously comforting.

It's packed with juicy chicken breast, softened leeks and chestnut mushrooms, all swimming in a creamy, thyme-infused sauce. A golden puff pastry lid finishes everything off beautifully. Because a pie without pastry is really just a casserole having an identity crisis.

With an estimated 41g of protein and 427 calories per serving, it's a brilliant option for anyone trying to hit their protein targets while still enjoying proper, satisfying dinners.

The main protein source is lean chicken breast, and all you'll need is a large frying pan, a small mixing bowl and an ovenproof pie dish.

It serves four, takes around 15 minutes to prepare and is ready in approximately an hour. Perfect for busy family evenings, Sunday dinners or meal prepping when you fancy something a little more exciting than another chicken salad.

Why You'll Love This High-Protein Recipe

  • Around 41g of protein per serving. Thanks to the generous amount of chicken breast, this pie makes hitting your daily protein target considerably more enjoyable.
  • Lighter than a traditional chicken pie. Using a puff pastry lid rather than a full pastry casing keeps things a little lighter without sacrificing that glorious golden crunch.
  • Proper comfort food. Creamy chicken, sweet leeks and buttery pastry deliver all the cosy Sunday dinner vibes.
  • Simple supermarket ingredients. Everything can be found in your local Tesco, Aldi or Lidl. No mysterious powders or ingredients requiring a second mortgage.
  • Family-friendly and filling. Mild, creamy flavours make this a great dinner for everyone, including fussy eaters.
  • Great for preparing ahead. Make the filling in advance and simply add the pastry before baking.

Key Ingredients

High-protein chicken and leek pie ingredients including chicken breast, leeks, mushrooms and puff pastry

Chicken Breast. The protein powerhouse of this recipe. Lean, tender chicken breast provides the bulk of the protein without adding excessive fat. Cutting it into evenly sized pieces helps everything cook at the same rate.

Leeks. These bring a lovely mild, sweet onion flavour that works brilliantly with the creamy sauce. Make sure you wash them thoroughly because leeks have an extraordinary talent for hiding soil between their layers.

Chestnut Mushrooms. Add an earthy, savoury depth to the filling. Cooking off their moisture before adding the chicken helps prevent a watery pie.

Cream. Just 100ml gives the filling a luxurious, creamy texture. There's enough to make it feel indulgent without drowning everything in sauce.

Reduced-Salt Chicken Stock. Builds a savoury base for the sauce while allowing you to control the saltiness.

Cornflour. The secret to a thick, velvety filling that stays inside the pie rather than escaping across your plate.

Dijon Mustard. Just one teaspoon adds a subtle tang that cuts through the richness of the cream. It won't make the pie taste overwhelmingly mustardy.

Dried Thyme and Parsley. Classic herbs that complement the chicken, mushrooms and leeks without overpowering their natural flavours.

Ready-Rolled Puff Pastry. The golden, flaky crowning glory. Using 120g keeps the pastry portion sensible while still delivering that all-important crunch.

Egg. Brushing the pastry with beaten egg gives it that beautiful glossy, golden finish. Because we eat with our eyes first, apparently.

How to Make High-Protein Chicken and Leek Pie

Preheat the oven to 200°C (180°C fan). Lightly grease a medium-sized ovenproof pie dish. Heat 1 tsp olive oil in a large non-stick frying pan over a medium heat. Add the sliced leeks and chestnut mushrooms and cook for 6–8 minutes until softened and most of the moisture has evaporated. Stir in the minced garlic, dried thyme and parsley, then cook for another minute until fragrant.

Add the diced chicken breast to the pan with the softened leeks and mushrooms. Cook for 4–5 minutes, stirring occasionally, until the chicken is lightly golden on the outside. Don't worry about cooking it all the way through just yet – it'll finish cooking in the oven.

Whisk the cornflour into the cold chicken stock until smooth, then pour it into the pan. Add the Dijon mustard, salt and black pepper, stirring everything together. Simmer gently for 2–3 minutes until the sauce begins to thicken and coats the chicken and vegetables.

Pour in 100ml cream and stir gently until everything is coated in a rich, creamy sauce. Simmer for another 2–3 minutes until slightly thickened. Taste and adjust the seasoning if needed. This is where your high-protein chicken and leek pie starts looking seriously irresistible.

Spoon the creamy chicken, leek and mushroom filling into a lightly greased ovenproof pie dish. Spread everything evenly so each serving gets plenty of tender chicken and delicious sauce. Leave to cool for around 5 minutes before adding the pastry.

Cut the ready-rolled puff pastry into strips and arrange them in a criss-cross lattice pattern over the filling, as shown in the photo. Gently press the pastry edges against the rim of the dish to secure them. This creates a lovely woven topping that turns beautifully crisp and golden in the oven.

Brush the puff pastry lattice lightly with beaten egg to give it a glossy, golden finish. Bake in a preheated oven at 200°C (180°C fan) for 20–25 minutes, until the pastry is puffed and golden and the filling is bubbling. Make sure the chicken is fully cooked through, then leave the pie to rest for 5 minutes before serving.

Top tip: Serve your high-protein chicken and leek pie with steamed broccoli and green beans for a satisfying family dinner. Creamy filling, crispy pastry and plenty of protein – comfort food sorted!

For the Chicken & Leek Filling

  • 450g skinless, boneless chicken breast, diced into bite-sized pieces
  • 2 medium leeks (250g trimmed weight), washed and finely sliced
  • 150g chestnut mushrooms, sliced
  • 2 garlic cloves, minced
  • 100ml cream
  • 150ml reduced-salt chicken stock
  • 1 tbsp cornflour
  • 1 tsp Dijon mustard
  • 1 tsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp dried parsley
  • 1/2 tsp ground black pepper
  • 1/4 tsp salt, or to taste

For the Pie Topping

  • 120g ready-rolled puff pastry
  • 1 small egg, beaten (for brushing)

Instructions

  1. Preheat the oven to 200°C (180°C fan). Lightly grease a medium-sized ovenproof pie dish.
  2. Heat the olive oil in a large non-stick frying pan over a medium heat. Add the sliced leeks and mushrooms and cook for 6–8 minutes, stirring occasionally, until softened and most of the moisture from the mushrooms has evaporated.Add the minced garlic, dried thyme and parsley. Cook for another minute until fragrant.
  3. Add the diced chicken breast and cook for 4–5 minutes, stirring occasionally, until lightly golden on the outside. The chicken does not need to be fully cooked at this stage, as it will finish cooking in the oven.
  4. In a small bowl, whisk the cornflour into the cold chicken stock until smooth. Pour into the pan along with the Dijon mustard, salt and black pepper. Stir well and simmer gently for 2–3 minutes until the sauce begins to thicken.
  5. Pour in the 100 ml cream and stir until well combined. Simmer gently for another 2–3 minutes until the sauce is rich, creamy and slightly thickened. Taste and adjust the seasoning if necessary.
  6. Transfer the chicken and leek filling to the prepared pie dish, spreading it evenly. Allow to cool for 5 minutes before adding the pastry.
  7. Lay the puff pastry over the filling, trimming any excess and gently pressing the edges against the rim of the dish to seal. Cut a small slit in the centre to allow steam to escape.
  8. Brush the pastry lightly with the beaten egg. Bake for 20–25 minutes, or until the pastry is puffed, crisp and golden brown and the filling is bubbling around the edges. Ensure the chicken is fully cooked through.
  9. Remove from the oven and allow the pie to rest for 5 minutes before slicing and serving.

Serving & Storage

Homemade high-protein chicken and leek pie with flaky golden pastry and rich creamy chicken filling

To Store – Keeping Chicken and Leek Pie Fresh for Later

Allow the chicken and leek pie to cool, then transfer any leftovers to an airtight container and refrigerate within two hours of cooking.

Store in the fridge for up to 2 days.

The pastry will soften slightly in the fridge, but the creamy chicken filling will still taste delicious.

For the best results when preparing ahead, keep the cooked filling separate from the uncooked pastry until you're ready to bake.

To Reheat

For the crispiest pastry, reheat individual portions in an oven preheated to 180°C (160°C fan) for approximately 15–20 minutes, or until piping hot throughout.

You can also microwave individual portions, although the pastry will lose some of its crispness.

Only reheat leftovers once, and make sure the chicken is thoroughly heated before serving.

To Freeze

The creamy chicken and leek filling freezes well, but I recommend freezing it separately from the pastry for the best texture.

Allow the filling to cool completely, transfer to a freezer-safe container and freeze for up to 3 months.

Defrost overnight in the fridge, reheat the filling thoroughly, then transfer to a pie dish and top with fresh puff pastry. Bake until golden and bubbling.

Cream-based sauces can occasionally separate after freezing, so give the filling a good stir as it reheats.

Serving Suggestions

This high-protein chicken and leek pie is already a satisfying meal, but a few simple sides can turn it into a proper family feast.

  • Steamed broccoli or green beans: Add colour, fibre and extra vegetables without overwhelming the creamy flavours.

  • Mashed potatoes: Perfect for soaking up that delicious chicken and leek sauce.

  • Roasted carrots and parsnips: Their natural sweetness works beautifully with the savoury filling.

  • Peas: A classic British pie companion, plus a little extra plant-based protein.

  • Cauliflower mash: A lighter alternative to traditional mash that still delivers plenty of comfort.

Variations & Tips

  • Boost the protein even further. Replace part of the cream with thick, high-protein Greek yoghurt or blended cottage cheese. Stir it in over a low heat to reduce the chance of splitting.

  • Try chicken thighs. Skinless, boneless chicken thighs give the filling a richer flavour and stay particularly juicy. They'll contain a little more fat than chicken breast, but they're delicious.

  • Make the filling properly thick. Let the sauce reduce until it coats the back of a spoon. A watery filling creates soggy pastry, and nobody wants their pie lid doing the backstroke.

  • Cool the filling before adding pastry. Even five minutes helps prevent the pastry from softening too quickly. For the puffiest results, use chilled pastry over a cooled filling.

  • Add extra vegetables. Frozen peas, finely chopped spinach or diced carrots are easy additions. If using spinach, cook off any excess moisture before assembling the pie.

  • Get that golden pastry finish. Brush the pastry lightly with beaten egg and cut a small steam hole in the centre. This helps the pastry puff up beautifully while allowing excess moisture to escape.

FAQ

High-protein chicken and leek pie with crispy golden pastry and creamy chicken mushroom filling

Can I make this high-protein chicken and leek pie ahead of time?

Absolutely! Prepare the chicken and leek filling up to 24 hours in advance and store it covered in the fridge. When you're ready to cook, add the chilled puff pastry and bake, allowing extra time if the filling is cold, until the pastry is golden and the centre is piping hot.

Can I use milk instead of cream?

Yes, although the sauce won't be quite as rich. Try using 100ml semi-skimmed milk with a little extra cornflour to help it thicken. You could also use reduced-fat crème fraîche for a creamy finish with a slight tang.

How do I stop my chicken and leek pie from going soggy?

The trick is to remove excess moisture from the mushrooms, thicken the filling properly and allow it to cool slightly before adding the pastry. Make sure your oven is fully preheated, and cut a small steam vent in the pastry lid.

Can I make this recipe without puff pastry?

Of course. You could top the creamy chicken and leek filling with mashed potatoes for a cottage-pie-style dinner, or use a few sheets of filo pastry for a lighter, crispier topping. Just remember that changing the topping will also change the calories and macros.
