What is Authentic Bolognese?

Authentic Bolognese, or ragù alla Bolognese, is a traditional meat sauce from Bologna, Italy.

Unlike the tomato-heavy versions found outside Italy, this dish is slow-cooked with beef, pancetta, soffritto, wine, milk, and just a touch of tomato purée.

On 20 April 2023, the Bologna Chamber of Commerce formally registered the official authentic Italian Bolognese sauce recipe, ensuring that future generations don’t ruin it with unnecessary herbs and spices.

Authentic Bolognese Main Ingredients

All the key ingredients for making authentic Italian Bolognese sauce, following the official recipe from Bologna

Olive oil: Sets the stage for pancetta drama. Use a good-quality one—this isn’t the time for corner-cutting.

Pancetta (not smoked): The foundation of flavour. This fatty superstar melts down to create a rich base for the sauce.

Beef mince: The heart of the dish. High-quality mince makes all the difference, so don’t go budget here.

Red or white wine: Adds depth and complexity. Choose a bottle you’d actually drink—cooking with rubbish wine is culinary heresy.

Whole milk: The unexpected hero. Milk softens the acidity of the tomato and gives the sauce a velvety finish.

Salt and pepper: Season like you mean it—this sauce deserves your A-game.

Tagliatelle: The only pasta worthy of this sauce. Its broad, flat ribbons soak up all the saucy goodness.

Ingredients

1 tsp olive oil

150 g pancetta (not smoked)

1/2 onion, finely chopped

1 celery stalk, finely chopped

1 carrot, finely chopped

400 g beef mince

120 ml red or white wine

200 ml tomato passata

1 tbsp tomato puree

230 ml vegetable stock

120 ml whole milk

Salt and pepper

Tagliatelle for serving

Instructions

Heat a heavy-bottomed pan (Nonna’s old pot if you’ve got one) and add the olive oil. Toss in the pancetta and let it melt down until crispy and golden.

Stir in the onion, celery, and carrot. Sauté until soft and fragrant—this is your aromatic base.

Add the beef mince, breaking it up with a spoon. Brown it thoroughly; no grey meat allowed.

Pour in the wine, letting it evaporate completely. This step is crucial for unlocking all the rich flavours.

Add the tomato passata, purée, and vegetable stock. Stir it all together, cover, and let it simmer for one glorious hour.

After an hour, pour in the milk. Cover again and let it simmer for another hour. Low and slow is the name of the game.

Serve over tagliatelle, with a dusting of Parmesan if you like. Pair it with a glass of the wine you cooked with for maximum authenticity.

In my opinion, it's never great to freeze cooked pasta. The sauce freezes fine, just cook the pasta when you're ready to eat it fresh.

Can you cook Bolognese from frozen?

Yes, you can cook Bolognese straight from frozen, but it’s best to defrost it first for even heating. Just make sure it’s piping hot before serving—nobody wants half-frozen Bolognese!

What’s the difference between ragù and Bolognese?

Can I use spaghetti instead of tagliatelle?

  1. Made this last night and served up with some fusilli and a little sprinkling of Parmesan. Is a long cook time but worth it - 2 of the hours you don't need to do anything. Absolutely banging, this is now my go to bolognese recipe.
