Ingredients
- 400 g sweet potatoes
- 20 g oats
- 2 scoops of chocolate whey protein powder
- 1 egg
- 2 tbsp honey
- 1 tsp baking powder
- 1 tsp coconut oil
- 2 tbsp chopped nuts
- 3 tbsp cocoa powder
Instructions
To make the sweet potato brownies, you'll first need to preheat an oven to 180 degrees Celsius.
Peel and chop the sweet potatoes and boil in a pan of water for around 15 minutes before draining them. Tip the cooked sweet potato on a plate so it can begin to cool.
In a food processor add the raw oats and quickly blitz so they resemble flour.
Add the protein powder, egg, honey, baking powder, coconut oil and chopped nuts to the food processor and give it a quick blitz.
Add the sweet potato (it doesn't need to be completely cold, just not piping hot) to the food processor and mix everything through.
Grease a baking tray and pour the mixture onto it then pop it into the oven for around 30 Minutes.
Allow cooling completely before removing from the baking tray and slicing into 8 pieces.
