Creamy Cajun chicken is a quick, high-protein dinner made with seasoned chicken breast, smoky Cajun spices, peppers, tomatoes, cream and a squeeze of lime to wake the whole thing up.

It’s perfect for busy weeknights, meal prep, or those nights when you want something that tastes slightly more exciting than “chicken and rice again, but with a brave face”.

Cajun Seasoning. This brings the smoky, peppery, slightly spicy flavour. Different brands vary in salt and heat, so taste your sauce before adding any extra seasoning.

Smoked Paprika. Adds colour, warmth and a deeper smoky flavour. It also helps make the chicken look beautifully golden, which is half the battle when cooking chicken breast.

Onion Granules and Garlic Granules. These coat the chicken evenly and help build flavour before it even hits the pan. Tiny powders, big contribution. Very much the quiet overachievers.

Dried Oregano. Adds a herby background note that works really well with Cajun spices and creamy sauces.

Extra Virgin Olive Oil. Used to brown the chicken and help the seasoning form a golden crust. Don’t skip the browning step; it gives the sauce far more flavour later.

Red Onion. Adds sweetness and body to the sauce once softened. It also helps balance the spice from the Cajun seasoning.

Sweet Red Pepper. Brings colour, sweetness and texture. It softens into the sauce and makes the whole dish feel more like a meal, rather than just chicken having a creamy tantrum.

Garlic. Fresh garlic adds punch and depth. Add it after the pepper and onion so it doesn’t burn and turn bitter.

Chicken Stock. This deglazes the pan and pulls all the flavour from the bottom into the sauce. That golden stuff stuck to the pan is not mess. It’s dinner magic.

Light Single Cream. Creates the creamy sauce without making the dish too heavy. It gives that silky finish while keeping the calories sensible.

Cherry Tomatoes. Add freshness, colour and a little acidity. They soften into the sauce and stop it feeling too rich.

Lime Juice. This is the final flavour lift. The acidity cuts through the cream and brings the Cajun spices to life.

How To Make Creamy Cajun Chicken

Add the chicken breast to a bowl with the Cajun seasoning, smoked paprika, onion granules, garlic granules and dried oregano. Toss until the chicken is evenly coated all over. You want every bit covered, because bland chicken breast has had enough chances.

Heat the olive oil in a large frying pan over a medium-high heat. Add the seasoned chicken breasts and cook for 5–6 minutes on each side until deeply golden and cooked through. Remove from the pan and set aside.

Reduce the heat slightly, then add the red onion and sweet red pepper to the same pan. Cook for 4–5 minutes until softened, stirring regularly. Don’t wipe the pan first — all those spicy browned bits are going straight into the sauce where they belong.

Add the crushed garlic, smoked paprika and Cajun seasoning. Stir for around 30 seconds until fragrant. This step wakes up the spices and makes the sauce taste fuller, rather than like seasoning was invited at the last minute.

Pour in the chicken stock, scraping the bottom of the pan to lift up all the flavour. Add the cherry tomatoes, then simmer for 3–4 minutes until the sauce reduces slightly and the tomatoes begin to soften.

Lower the heat, then stir in the light single cream. Return the chicken to the pan and spoon the creamy Cajun sauce over the top. Simmer gently for 2–3 minutes until hot and glossy. Finish with lime juice and scatter over coriander or parsley before serving.

Serving & Storage: Keeping Creamy Cajun Chicken Fresh For Later

To Store

Let the creamy Cajun chicken cool completely, then transfer it to an airtight container. Store in the fridge for up to 3 days. Keep the chicken and sauce together so the chicken stays juicy rather than drying out like it’s been abandoned.

To Reheat

Reheat gently in a frying pan over a low-medium heat until piping hot throughout. Add a splash of chicken stock, water or milk if the sauce has thickened in the fridge. You can also microwave it in short bursts, stirring the sauce between each one.

To Freeze

Can I make creamy Cajun chicken with chicken thighs?

Yes. Boneless, skinless chicken thigh fillets work really well and stay very juicy. They’ll need a similar cooking time, but always check they’re cooked through before serving.

Is creamy Cajun chicken spicy?

It depends on the Cajun seasoning you use. Most supermarket blends are mild to medium, but some are saltier or hotter than others. Use a mild blend if cooking for kids, then add chilli flakes at the end for adults.

  • 600g chicken breast
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1 tsp onion granules
  • 1 tsp garlic granules
  • 1 tsp dried oregano
  • 1 tbsp extra virgin olive oil
Cajun Lime Sauce
  • 1/2 red onion, finely chopped
  • 1 sweet red pepper, finely chopped
  • 3 garlic cloves, crushed
  • 1 tsp smoked paprika
  • 1 tsp Cajun seasoning
  • 200ml chicken stock
  • 120ml light single cream
  • 100g cherry tomatoes, halved
  • Juice of 1/2 lime (adjust to taste)
  • Fresh coriander or parsley, optional

Instructions

Mix the Cajun seasoning, smoked paprika, onion granules, garlic granules, and oregano together. Coat the chicken evenly with the seasoning mix.

Heat the olive oil in a large frying pan over medium-high heat. Cook the chicken breasts for 5–6 minutes per side until deeply golden and cooked through. Remove and set aside.

Reduce the heat slightly. Add the red onion and red pepper to the same pan and cook for 4–5 minutes until softened.

Add the garlic, smoked paprika, and Cajun seasoning. Stir for 30 seconds until fragrant.

Pour in the chicken stock and scrape up any flavour from the bottom of the pan. Simmer for 3–4 minutes to reduce slightly.

Lower the heat and stir in the light cream and cherry tomatoes. Simmer gently for 3–4 minutes until the sauce thickens slightly.

Return the chicken to the pan and spoon the sauce over the top. Simmer for 2 minutes to warm through. Squeeze over some lime and serve with the coriander sprinkled over.

  1. Made this last night it was absolutely delicious and empty plates all rounds. I substituted the breast for thighs and the single cream i just used 100g of low fat garlic and herb soft cheese and it was scrumptious and definite YESSS from us . I served with broccoli to get the veg intake up
