How To Make Marry Me Chicken Orzo

1 - Heat the oil in a large frying pan over medium–high heat, then add the seasoned chicken pieces. Cook for 2–3 minutes until they’re lightly golden on the outside. Remove from the pan and set aside.

2 - Add the diced onion to the same pan and cook for a few minutes until soft and translucent. Stir in the garlic and cook for 30 seconds until fragrant.

3 - Pour in the milk, chicken stock, tomato purée and mixed herbs. Add the orzo and give everything a good stir to prevent sticking. Reduce the heat and let it cook gently.

4 - Tip the browned chicken back into the pan, followed by the sliced sundried tomatoes. Stir well and let it simmer for about 5 minutes until the sauce starts to thicken.

5 - Continue cooking until the orzo is tender and the sauce has thickened into a rich, creamy consistency.

6 - Stir in the baby spinach and reduced-fat cream cheese. Keep the heat low and gently fold everything together until the spinach wilts and the sauce becomes silky.

7 - Sprinkle in the grated reduced-fat cheddar and stir until melted through. Taste and season if needed, then serve with fresh basil on top.

Ingredients

  • 500g chicken breasts, cubed
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tbsp olive oil
  • 1 medium onion
  • 10 g garlic, puree or finely chopped
  • 20 g tbsp tomato puree
  • 240 ml skimmed milk
  • 600 ml chicken stock
  • 1 tsp mixed herbs
  • 200 g orzo (dry weight)
  • 85 g sundried tomatoes, sliced
  • 2 handfuls baby spinach
  • 60 g reduced fat cream cheese
  • 60 g reduced fat cheddar cheese, grated
  • small bunch fresh basil

Instructions

Heat the olive oil in a large frying pan over a medium high heat and add the chicken breast pieces and season. Sauté for 2 – 3 minutes until the chicken pieces are golden brown on the outside. Remove from the pan and set aside.

Add the diced onion to the pan and sauté for a few minutes until its translucent. Add in the garlic and sauté for 30 seconds.

Add the tomato puree, milk, stock, Italian herbs, and orzo into the pan. Give it a good stir around to make sure the orzo doesn’t clump. Reduce the heat to medium and cook for 10 minutes.

Add the sundried tomato into the pan and add the chicken back in. Stir it all together and let it simmer until the sauce thickens and the orzo is almost cooked around 5 minutes.

Stir in the baby spinach, cream cheese, and half the cheddar into the pasta and heat on low until the spinach wilts. If the sauce is slightly thick you can loosen it with a little more milk. Taste the sauce and add more salt and pepper if necessary.

Top with the rest of the cheddar and basil and serve.

  1. Absolutely loved the marry me chicken orzo. Easy to follow recipe and so tasty. I halved the recipe as I was only making it for myself ( for 2 meals) and as I had no skimmed milk used 100ml of semi skimmed and a little more stock instead.
