This is a beautiful, fresh, tasty and easy Greek quinoa salad with feta cheese. It works well as a main course if you follow a plant-based diet but also as a delicious accompaniment to other meals too.

This high protein quinoa recipe is best made with the pre-cooked quinoa in the packets as this also saves a lot of time but you could easily make your own if you preferred too. You could also play around and make it with puy lentils or bulgar wheat too.

Ingredients

  • 1 tbsp. olive oil
  • 1 lemon, juiced
  • 1/2 tsp. red pepper flakes (optional)
  • Salt and pepper
  • 180 g pre-prepared quinoa
  • 120 g feta cheese, in cubes
  • 2 tomatoes, cubed
  • 1/4 red pepper, cubed
  • 1/2 cucumber, cubed
  • 1/2 red onion, thinly sliced
  • 20 g green olives
  • 20 g Kalamata olives
  • Handful fresh parsley, chopped

Instructions

To make the quinoa salad with feta, in a small bowl, combine olive oil, lemon juice, red pepper flakes, salt and pepper.

In a big bowl, combine quinoa , feta cheese, tomatoes, red bell pepper, cucumber, red onion, green olives and kalamatas.

Pour over the dressing and add some chopped parsley.
