You’ll need a slow cooker and either the sauté function or a frying pan for softening the onion, ginger and garlic first. That tiny extra step builds loads more flavour.

Thai Green Curry Paste. This is where most of the flavour comes from, so use one you actually like. Different brands vary massively in spice level, so if yours is particularly fiery, maybe don’t go in like a maniac.

Coconut Milk. Use full-fat coconut milk here, not light. It gives the curry that creamy, silky texture and helps balance the heat from the curry paste.

Onion. Softened first to add sweetness and body to the sauce. It’s not glamorous, but neither is emptying the dishwasher, and both are important.

Ginger. Bright, warm and slightly peppery, ginger gives the curry a fresh kick and stops the sauce tasting flat.

Garlic. Adds savoury depth and makes the whole kitchen smell like something excellent is happening.

Fish Sauce or Soy Sauce. Fish sauce gives that deep salty, savoury Thai-style flavour. Soy sauce works well if you prefer it or want to avoid fish sauce.

How To Make Slow Cooker Thai Green Chicken Curry

Add the coconut oil to the slow cooker base, ready to soften the onion, garlic and ginger.

Note: If your slow cooker doesn’t have a sauté/sear function, add the coconut oil to a frying pan instead. Soften the onion, garlic and ginger in the pan first, then tip everything into the slow cooker before moving on to the next step.

Add the sliced onion, chopped ginger and garlic, then cook until the onion has softened and turned lightly golden. This little step builds a much better curry base than just flinging everything in raw and hoping for the best.

Add the chicken breast, Thai green curry paste, coconut milk, cornflour, fish sauce or soy sauce, lime juice and brown sugar. Stir everything together so the chicken is coated in that creamy green curry sauce.

Pop the lid on and cook on low for 4–5 hours, until the chicken is tender and cooked through. The sauce should be creamy, fragrant and gently thickened.

Add sliced basil, fresh chilli and a squeeze of lime if you like. Serve with rice, noodles or stir-fried veg for an easy high-protein dinner.

To Store

Let the Slow Cooker Thai Green Chicken Curry cool completely, then transfer it to an airtight container. Keep it in the fridge for up to 3 days. The flavour often gets even better the next day, because the sauce has time to settle down and become more smug.

To Reheat

Reheat gently in a saucepan over a low heat until piping hot, stirring regularly. You can also microwave it in short bursts, stirring halfway through so you don’t end up with volcanic sauce on the outside and fridge-cold chicken in the middle.

This curry freezes well for up to 3 months. Portion it into freezer-safe tubs or bags, cool fully, label it, then freeze. Defrost overnight in the fridge before reheating. Give it a good stir once hot, as coconut-based sauces can sometimes separate slightly after freezing.

  • Add extra veg at the right time. Green beans, baby corn, peppers or mangetout work well, but add them for the final 45–60 minutes so they don’t go limp and tragic.
  • Use chicken thighs if you prefer. They’re slightly higher in calories but very forgiving in the slow cooker and stay juicy.
  • Make it even higher in protein. Stir through extra cooked chicken at the end, serve with edamame on the side, or add a few spoonfuls of Greek yoghurt after cooking for a creamy protein boost.
  • Control the spice level. Start with less curry paste if cooking for kids or spice-sensitive adults. Add fresh chilli or chilli flakes at the end for those who enjoy a recreational forehead sweat.
  • Don’t skip softening the onion, garlic and ginger. It gives the sauce a better base flavour. Raw onion straight into a slow cooker can taste a bit harsh, like it’s trying to make a point.
  • Finish with lime. Add the lime juice near the end or just before serving. It keeps the curry tasting fresh rather than heavy.

Can I use chicken thighs instead of chicken breast?

Yes. Chicken thighs work really well in this recipe and tend to stay juicy in the slow cooker. Just trim off any excess fat and use the same weight as the chicken breast.

Is this Slow Cooker Thai Green Chicken Curry spicy?

It depends on the Thai green curry paste you use. Some supermarket pastes are quite mild, while others are much hotter. Start with less paste if you’re unsure, then add more once you know how brave everyone is feeling.

Can I make this curry dairy-free?

Yes. The recipe is naturally dairy-free as long as your Thai curry paste is dairy-free too. Always check the jar, because some brands like to sneak unexpected things in there, because apparently labels need drama.

  • 1 tsp. coconut oil
  • 1 onion, thinly sliced
  • 15 g ginger, chopped
  • 15 g garlic, chopped
  • 1 kg chicken breast, cubed
  • 80g Thai green curry paste
  • 400 ml coconut milk (not light)

  • 2 tbsp. fish sauce or soy sauce
  • 1 tbsp. lime juice

Instructions

Heat the coconut oil on medium heat and fry the onion until it’s softened. Add the ginger and garlic and fry for a further 30 seconds before tipping it into the slow cooker.

Add all of the other ingredients. Pop the lid on and cook on low for 4-5 hours.
