Here's where this slow cooker chicken casserole came about....picture this: it’s the middle of July, the sun is actually shining for once (a small miracle in the UK), and the kids pipe up asking for a roast dinner.

They’ve got zero respect for seasonal eating or my poor kitchen, which is basically a sauna by midday.

But instead of blasting the oven for hours and melting into a puddle, I struck a deal. Enter this slow cooker chicken casserole. All the hearty, homey vibes of a Sunday roast, minus the sweltering kitchen and with a fraction of the faff.

It’s packed with tender chicken, chunky veg, and a rich sauce that practically hugs your taste buds. Plus, with a hefty whack of protein, it keeps everyone full (and hopefully quiet) for more than five minutes.

Honestly, it’s the best compromise since agreeing to watch Frozen for the 847th time. Only tastier.

A slow cooker chicken casserole is exactly what it sounds like: chicken (usually thighs for maximum flavour) slowly simmered with veggies, stock, herbs, and a few extras until everything’s tender, rich, and ridiculously comforting.

The slow cooker does all the heavy lifting, letting the flavours meld beautifully over hours. It’s the sort of dish that makes your kitchen smell like a French farmhouse, with zero actual effort. Bonus: it’s a cracking way to batch cook for the week.

Tender chicken & chunky veg in a rich sauce. This slow cooker chicken casserole is pure comfort!

Ingredients

  • 1 tbsp olive oil
  • 1kg skinless, boneless chicken thighs
  • 2 medium onions, chopped (200g)
  • 3 cloves garlic, minced
  • 150 ml white wine
  • 4 medium carrots, sliced (400g)
  • 250g potatoes, peeled and diced
  • 200g button mushrooms, halved
  • 2 tbsp tomato puree
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • 1 tbsp mixed herbs
  • 500 ml chicken stock
  • 30g cornflour mixed with cold water
  • Salt and black pepper to taste
  • Fresh parsley, chopped

Instructions

Heat 1 tbsp olive oil in a large frying pan over medium heat. Brown the chicken thighs for 3–4 minutes on each side, then transfer them to the slow cooker.

In the same pan, add the remaining 1 tbsp olive oil. Sauté the chopped onions for 3 minutes until soft. Add garlic and cook for 1 more minute. Pour in the wine and reduce by 2/3s then tip everything into the slow cooker.

Add the carrots, diced potatoes, mushrooms, tomato puree, Dijon mustard, salt mixed herbs, chicken stock and cornflour. Stir gently to combine.

Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken and vegetables are tender.

Crack in salt and black pepper. Sprinkle with fresh parsley and serve warm.
