Louise is one of our awesome team members and she's quite the dab hand at vegetarian cooking. This is one of her epic curry recipes that is extremely easy to make, it's ridiculously tasty and it packs less than 300 calories per serving. Not bad eh! If you've not heard of garam masala before, it's a spice blend that's a base many Indian dishes to bring flavour and warmth. You can buy it in most supermarkets or grind your own if you're adventurous and want to be super authentic.
If you're wanting to boost the protein content of this meal you could add in some beans to keep it vegetarian or some precooked chicken chunks to turn it into a chicken and lentil delight.

Heat the coconut oil in a large pan on a medium heat and add the onions and cook for around 10 minutes until softened.
Add the garlic and ginger and cook for further 2 minutes.

Reduce the heat to low, cover and simmer for 30 minutes stirring occasionally.
Remove the lid and simmer for a final 15 minutes.
