The richness of flavour comes from different aromatic components and it often comes with a spicy kick. This easy-to-prepare recipe is really something to look forward to since it’s healthy, fresh, flavoursome and most importantly, delicious! We’re pretty sure the whole family will enjoy it.

Don’t like salmon? Just swap it with a different fatty fish like seabass or trout and you’re good to go. Another option for the side dish would be rice or mashed sweet potatoes. This fancy high protein dish is just perfect for lunches or dinner.

 ½ garlic clove, finely cut
 ½ tbsp fresh ginger, finely cut
 3 tbsp soy sauce
 1 tbsp brown sugar (or sugar substitute for lighter version)
 1 tsp turmeric powder
 1 tsp sesame oil
 2 tbsp lime juice
 2 salmon fillets (around 150g each)
 ½ spring onion, thinly sliced
 1 carrot, thinly sliced
 ¼ courgette, thinly sliced
 100 g couscous, uncooked
 200 ml chicken stock
 2 spring onions, thinly sliced

Mix garlic clove, fresh ginger, soy sauce, brown sugar, turmeric powder, sesame oil and lime juice until well combined.

Marinate the salmon for 30 minutes in the mixture.

Preheat the oven to 200ºC.

Heat a non-stick pan to high temperature, remove salmon from the marinade and sear it until golden on both sides - around 5 minutes per side.
*NOTE: If you are in a hurry, you can skip this step and add around 10 minutes of baking time, but this step makes it a bit more crunchy.

Cut 2 foil squares (12 in x 12 in) and place spring onion, carrot and courgette in the bottom. Top with one salmon fillet and start folding to make a packet, add the remaining marinade and close. Place them on a baking tray and bake for 20 minutes

Heat the chicken stock until boiling and cover the couscous with it, let it rest while the salmon is baking. About 5 minutes before removing the salmon from the oven, shake off the couscous with a fork.

Serve the salmon and veggies over the couscous and top with spring onions and fresh coriander.
