If you love big flavours, bold heat, and meals that pack a proper protein punch, this high-protein Szechuan Chicken is about to become your new midweek favourite.

Close-up of spicy Szechuan chicken with peppers and sesame seeds.

It’s inspired by the fiery dishes of China’s Sichuan province, known for that unmistakable numbing, tingling heat you get from Szechuan peppercorns.

Because it’s stir-fried at high heat, everything cooks in minutes – ideal for busy weeknights, meal prep, or when you’re starving and refuse to wait longer than the length of a kettle boil.

Expect around 40g protein per serving and roughly 400 calories, depending on portions.

All you need is a wok, a chopping board, and a tolerance for heat levels somewhere between “cheeky” and “call the fire brigade.”

Why You’ll Love This High-Protein Recipe

Plates of Szechuan chicken served with fried rice on a wooden table.

  • Roughly 40g protein per serving, thanks to juicy chicken thighs.

  • Ready in 20 minutes – faster than scrolling Deliveroo for “something spicy.”

  • Made with simple UK supermarket ingredients (yes, even Szechuan peppercorns these days).

  • Ideal for meal prep – reheats beautifully with rice or noodles.

  • Perfect for weight-loss goals: super high-protein, seriously filling, and no deep frying.

Key Ingredients

Chicken thigh fillets. Juicy, flavour-packed, and perfect for high-heat stir-frying. They soak up the spicy sauce like champs.

Red onion. Adds sweetness and crunch to balance all that heat.

Green pepper. Fresh, crisp and the veggie hero that stops this becoming just a bowl of fire and protein.

Garlic. The aromatic backbone that kicks off the entire dish – pure or minced, it brings serious depth.

Ginger. Warm, zingy, and essential for giving the stir-fry its signature kick.

Red & green chillies. The personalities of the dish: red brings the fire, green brings a fresher heat.

Szechuan peppercorns. The star player providing that iconic tongue-tingling, citrusy buzz.

Light soy sauce. Adds savoury saltiness and pulls the flavours together.

Dark soy sauce. Rich and glossy – gives the chicken its deep colour and slightly caramelised flavour.

Honey. A touch of natural sweetness to balance the spice.

Oyster sauce. Adds umami depth (don’t worry, it doesn’t taste like oysters).

Serving Suggestions

  • Steamed jasmine or basmati rice

  • Egg noodles or wholewheat noodles

  • Stir-fried pak choi or broccoli

  • Cauliflower rice for a lighter, lower-carb option

Variations & Tips

Overhead shot of with peppers on a blue plate.

  • Want extra protein? Add edamame beans or tofu cubes.

  • Swap chicken thighs for turkey thigh to reduce fat and keep protein high.

  • If you’re feeding kids, reduce the chillies and peppercorns for a milder version.

  • Toast the Szechuan peppercorns before using for deeper, more aromatic flavour.

  • Add a spoonful of black bean sauce for a richer, saltier Chinese-style finish.

Frequently Asked Questions (FAQs)

Close-up with peppers and sesame seeds.

Is Szechuan chicken very spicy?

Yes – but it’s a balanced spice. The honey and soy mellow the heat. Reduce the chillies if you’re not into “mouth tingles for hours.”

Can I use chicken breast instead?

You can, but it’s easier to overcook. Thighs stay juicier and work better with high-heat stir-frying.

Can I add extra vegetables?

Absolutely – carrots, baby corn, mange tout, or broccoli all slot in nicely. Just don’t overcrowd the wok.

What’s the best way to serve Szechuan chicken?

Rice or noodles, simple as. Something to soak up that delicious glossy sauce.

  • Total Time: 20 mins
  • Yield: 3 1x

Ingredients

Units Scale
  • 1 tbsp oil
  • 600g chicken thigh fillets, chopped into cubes
  • 1 red onion, chopped into cubes
  • 1 green pepper, chopped into cubes
  • 10g garlic, puree or very finely chopped
  • 10g ginger, puree or very finely chopped
  • 1 red chilli, chopped
  • 1 green chilli, chopped
  • 1 tbsp Szechuan peppercorns
  • 1 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp honey
  • 1 tbsp oyster sauce

Instructions

Heat things up: Grab your wok and crank up the heat. Add the oil and toss in the chicken cubes. Stir-fry for a few minutes until they’re cooked through and looking golden. Remove the chicken and set it aside (no sneaky bites... yet).

Veggie vibes: In the same pan, throw in the chopped red onion and green pepper. Fry for a couple of minutes until they’re softened but still have some crunch. Nobody likes soggy veg.

Spice attack: Add the garlic, ginger, chillis, and Szechuan peppercorns. Stir-fry for another minute, letting those flavours explode. You’ll know it’s working when your kitchen starts smelling like a spicy paradise.

Sauce magic: Chuck the chicken back into the pan. Add the light soy, dark soy, honey, and oyster sauce. Stir it all together until everything is beautifully coated in a glossy, spicy glaze. It should be sizzling and looking irresistible.

Serve it up: Plate your masterpiece and dig in. You’ll probably want seconds—just saying.
