Did you know that Italy is one of the largest producers of lemons? Therefore it's no surprise that they're often featured in Italian cookery, especially in dishes from Sorrento - a coastal town in southwestern Italy famed for its charming, beautiful and extremely fragrant lemon gardens.

 1 juice of 1 lemon
 50 ml booze (whisky, brandy etc)
 ½ tsp chilli flakes
 50 g honey
 pinch of black pepper
 pinch of dried rosemary
 pinch of salt
 1 tbsp olive oil
 4 chicken breasts, split down the middle
 fresh chopped parsley to garnish

In a bowl, combine the honey, lemon juice, chili flakes, rosemary, booze, salt and pepper and set aside.

Add the olive oil to the pan and add the chicken breasts. Gently fry for around 10 minutes or until they are thoroughly cooked through.

Pour the sauce mixture over the chicken and gently simmer for a few minutes until it has reduced and thickened.

Serve the chicken and sauce with a slice of lemon, your favourite vegetables and garnish with the fresh parsley.
