How to Make High-Protein Italian Lemon Chicken

In a bowl, whisk together the honey, lemon juice, lemon zest, chilli flakes, mixed herbs, and chicken stock until fully combined. This is your flavour bomb—sweet, sharp, and ready to cling to every bit of chicken.

Heat the olive oil in a large frying pan over medium-high heat. Add the sliced chicken breasts and cook for 5–10 minutes, turning occasionally, until they’re golden on the outside and about 90% cooked through. You want colour here—that’s where the flavour lives.

Pour in the booze (Marsala, sherry, brandy—whatever you’ve got) and let it bubble for a minute while scraping up all the caramelised bits from the pan. That’s your secret weapon.

Then pour in the sauce mixture, keep the heat fairly high, and simmer for 8–10 minutes until the sauce reduces into a thick, glossy glaze that coats the chicken beautifully.

Easy Italian lemon chicken recipe with 35g protein per serving. One pan and full of flavour

Ingredients

  • 50 g honey
  • 1 lemon juiced and zested
  • 1/2 tsp chilli flakes
  • 1/2 tsp mixed herbs
  • 250 ml chicken stock
  • 50 ml booze. Marsala is ideal, if not, use sherry, brandy or rum.
  • Few grinds of black pepper
  • 1 tbsp olive oil
  • 500 g chicken breasts, sliced into 1-2 cm steaks
  • fresh chopped parsley to garnish

Instructions

In a bowl, combine the honey, lemon juice, 1 tsp of lemon zest, chilli flakes, mixed herbs and stock and set aside.

Add the olive oil to the pan and add the chicken breasts. Fry for around 5-10 minutes on a medium to high heat until they are about 90% cooked through.

Pour the booze over the chicken and burn off some of the alcohol for a minute or so and scrape off any bits of food stuck to the bottom of the pan. This is called 'deglazing'.

Pour the sauce mixture over the chicken. Keep the heat quite high and simmer for about 8-10 minutes until it has significantly reduced and thickened. It should be more like a thick glaze rather than a runny sauce.

Serve the chicken and sauce with a slice of lemon, your favourite vegetables and garnish with fresh parsley.

The sauce took a long time to reduce, it definitely doesn’t need 250ml of stock - but the extra time taken to reduce the sauce to a glaze was time well spent.   2. I made this tonight for our dinner, I couldn't get the sauce to thicken up though even though I had the heat quite high, in the end I had to add some cornflour to the sauce to thicken it. I think next time might use a bit less stock.
    It was absolutely delicious though we all loved it, so much flavour! I did it with a side of roasted veggies
