How To Make Slow Cooker Pulled Beef

Start by gently softening the chopped red onion, carrot and celery in a frying pan with a little olive oil. You’re not looking for colour here – just soften everything for 4–5 minutes so the veg releases its natural sweetness and builds a stronger flavour base for the slow cooker.

Transfer the softened veg to the slow cooker, then pour in the beef stock and red wine. This deglazes all that flavour and creates the rich cooking liquid the beef will slowly break down into. Give it a good stir so everything’s evenly mixed.

Nestle the chunks of beef brisket into the sauce, making sure they’re mostly submerged. Don’t worry about perfect placement – the long, slow cook will do all the hard work for you.

After several hours on low, the beef will be beautifully tender and sitting in a deep, glossy sauce. At this stage, the brisket should already be starting to fall apart if you nudge it with a spoon.

Lift the beef out and shred it using two forks. It should pull apart effortlessly. This step lets you control the texture, making sure every strand gets coated in that rich, savoury sauce when it goes back in.

Ingredients

  • 1 tsp olive oil
  • 4 garlic cloves, chopped
  • 1 red onion, chopped
  • 1 carrot, chopped
  • 2 sticks of celery, chopped
  • 200 ml beef stock
  • 20 g tomato puree
  • 100 ml red wine
  • 2 bay leaves
  • 2 tsp mixed herbs
  • 1 tbsp corn flour
  • 1 kg beef brisket, cut into 4 sections

Instructions

Heat up the oil in a frying pan and chuck in the garlic, onion, carrot, and celery. Let them soften for about 5 minutes. Feel smug.

Transfer the veggies to the slow cooker. Add the beef stock, tomato purée, red wine, bay leaves, mixed herbs, and cornflour. Give it a stir. Feel even smugger.

Pop in your brisket pieces, making sure they’re well coated in all that good stuff.
