Beef Stifado is a traditional Greek stew made with beef (obviously), slow-cooked until tender in a rich tomato-based sauce.
What sets it apart is the aromatic blend of spices – think cinnamon, cloves, and nutmeg – that give it a warm, slightly sweet depth of flavour.
Typically paired with caramelised onions and a splash of red wine, this dish is comfort food with a touch of sophistication.
It’s usually served with crusty bread, rice, or even chips (yes, really) to mop up all that luscious sauce.
Slow Cooker Beef Stifado Key Ingredients:
Beef. The hero of the dish. Use lean, diced beef so you can skip the faff of trimming fat. It’s hearty, protein-packed, and oh-so-tender after an 8-hour spa session in your slow cooker.
Shallots. These little gems caramelise beautifully, adding sweetness and depth. No shortcuts here – peeling them is worth every tear.

1 tbsp olive oil
400gshallots, whole, peeled
10ggarlic cloves, chopped
175mlred wine
1.2kglean, diced beef
500mlpassata
1/2 tsp. rosemary
2 bay leaves
1/2 tsp. cinnamon
1 tsp. oregano
4 whole cloves
1/4 tsp. ground nutmeg
1 tsp. salt
1 tsp. black pepper
30gcornflour
20gtomato puree
Instructions
Heat the olive oil in a frying pan on medium heat and add the shallots.
Cook for about 10 minutes until golden brown. Add the garlic and fry for a further 30 seconds before adding the wine. Increase the temperature to high and reduce the wine so only about ¼ is remaining and it should be a thick, syrupy consistency. Tip all of this into the slow cooker.
Add the remaining ingredients. Put the lid on and cook on low for around 8 hours or until the beef starts to fall apart.
Remember to fish out the bay leaves and cloves before serving.
