What's Sriracha?
If you’ve never heard of Sriracha, don’t panic – you haven’t been living under a rock (probably). You’ve most likely seen the famous red bottle with the green cap lurking in supermarket aisles, looking all spicy and mysterious.
Originally from Si Racha, Thailand, this fiery sauce is a blend of chilli peppers, garlic, vinegar, sugar, and salt, giving it that perfect mix of heat, tang, and a touch of sweetness. The seasoning version captures the same bold flavours in a dry form, usually made from ground red chillies, garlic powder, vinegar powder, sugar, and salt. Basically, all the good stuff without the drippy mess.
It’s super versatile – sprinkle it on meats, veggies, seafood, or even popcorn if you're feeling adventurous. Want an easy spicy mayo? Just mix it with mayonnaise. Boom – instant flavour upgrade.

A slow cooker pork casserole is a hearty, flavour-packed dish where chunks of pork are slow-cooked to perfection in a rich, savoury sauce. The slow cooking process breaks down the meat, making it fall-apart tender and infused with whatever delicious flavours you’ve thrown in.
This version brings the heat with Sriracha chilli flakes, a touch of soy sauce, and the deep, aromatic goodness of star anise, garlic, and ginger. It’s the kind of dish that tastes like you’ve spent hours hovering over the stove, but in reality, your slow cooker does all the hard work while you binge-watch Netflix.
Slow Cooker Spicy Sriracha Pork Key Ingredients
Pork Fillet. Pork fillet is a super lean, affordable and versatile cut of meat. I love cooking with it and often use it in the slow cooker instead of the more common, and fattier, pork shoulder.
Sriracha. See above but this is the start of the show and the main ingredient. If you can't get it, use chilli flakes, a tiny bit of vinegar and more garlic and ginger. However, you should get it in most supermarkets.
Garlic & Ginger. I often use equal quantities of garlic and ginger as I buy big tubs of mixed garlic/ginger paste like this one. It's a total time saver instead of peeling and chopping.
Soy Sauce. Adds more savoury flavours. Use dark or light.
Stock. I use chicken or vegetable stock although you could probably use a ham stock too.
Honey. This adds a bit of sweetness and helps cut through the acidity a bit.
Fish Sauce. A key ingredient in pretty much all thai recipes. Even if you don't like fish, still use it, it doesn't make the recipe taste "fishy" it just gives it a key depth of flavour.
Star Anis. Ok first thing first, it's not in the photo as I forgot about it.....but you need it for this recipe. It adds gives a deliciously sweet, mild liquorice flavour to the dish. Remember to remove it after cooking!

Ingredients

1 tsp coconut oil
20ggarlic, pressed
20gginger, pressed
2 onions, sliced
1 star anis
1 tbsp sriracha chilli flakes
1kgpork loin fillet, chopped
1 tbsp soy sauce
1 tbsp fish sauce
10 grinds of the black pepper mill
250mlstock
1 tbsp corn flour
1 tsp honey
Instructions
Heat the coconut oil in a large frying pan on a medium to high heat and add the star anis. Fry for 30 seconds to allow the flavours to infuse into the oil.
Then add the onions and fry for few minutes until the onions start to turn translucent.
Add the garlic and ginger and fry for a further 30 seconds.
Tip everything from your work into a slow cooker and add all of the other ingredients and mix through.
Cover with the lid and cook on medium for 4-5 hours or low for around 6-7 hours.
Serve and remember to remove the star anis!
Garnish with a squeeze of lime and plenty of fresh coriander.

Absolutely! While pork loin fillet is lean and tender, you can swap it for pork shoulder if you want something even juicier. Pork shoulder has more fat, which means extra flavour and fall-apart tenderness after a few hours in the slow cooker. Just be prepared for a little extra shredding at the end – not that anyone’s complaining.

I promise it won’t make your casserole taste like the bottom of the ocean. Fish sauce adds deep umami richness that makes everything taste better. But if you really can’t handle the thought of it, swap it for Worcestershire sauce – it’s not quite the same, but it’ll do the trick.
