I love the work Scott is doing and he asked me if I’d like to share one of my favourite recipes with you - so I chose my Chicken, Prawn & Chorizo Paella! If you’re looking for a quick, easy, high protein meal for family, friends or a social occasion, then this one is an absolute winner. Paella is a really versatile dish, so if you don’t like chicken or prawns, simply swap that one out with more of the one you prefer. *Tip - as long as it has smoked paprika and a hint of lemon/lime it’s always going to taste UNREAL, regardless of what you choose to include.

Heat the oil in large pan on a high heat.
Add the chicken, chorizo, onions, garlic and cook for 5 to 10 minutes until the chicken is cooked through.
Reduce the heat to low and add paella rice, turmeric and paprika. Mix through and fry for around 2 minutes.
Add the stock and simmer for 15 minutes and stir often so the rice doesn't stick to the bottom of the pan.
Add the prawns, a squeeze of lemon, the spinach and simmer for 5 minutes more.
Serve and enjoy!
