This version keeps all the sticky, sweet-heat drama you’d expect, but swaps deep-frying and mystery oils for lean chicken breast and a glossy homemade sauce.

Try this spicy, sweet Firecracker Chicken made with lean chicken breast and a glossy homemade sauce. High in protein and ready faster than takeaway.

Ingredients

For the chicken:
  • 600g chicken breast, cut into bite-sized cubes
  • 2 tablespoons cornflour
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
For the sauce:
  • 3 tablespoons reduced-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons hot sauce
  • 2 tablespoons honey
  • 1 tablespoon tomato purée
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon chilli flakes (optional)
For serving:
  • 300g steamed broccoli
  • 2 spring onions, finely sliced
  • 1 teaspoon sesame seeds

Instructions

In a large bowl, toss the chicken pieces with the cornflour, salt, and pepper until evenly coated.

Heat the olive oil in a large non-stick frying pan or wok over medium-high heat. Add the chicken and cook for 6–8 minutes, turning occasionally, until golden brown and cooked through. Remove from the pan and set aside.

In the same pan, reduce the heat to medium. Add the soy sauce, rice vinegar, hot sauce, honey, tomato purée, garlic, ginger, and chilli flakes. Stir and simmer for 2–3 minutes until the sauce slightly thickens.

Return the cooked chicken to the pan and toss well to coat in the sauce. Simmer for a further 2 minutes until everything is glossy and heated through.

Divide the chicken between four plates. Top with sliced spring onions and sesame seeds. Serve with steamed broccoli or other greens for a balanced, low-carb meal.

  2. Certainly firey but so good!
    I used tabasco for the hot sauce, didn't have any sesame seeds but will make sure I have these for next time as I'm sure they'll add another dimension.
    Was really sticky.
    So easy to make as I find with all of your recipes.

    Went down a treat and was told was up there in the top few favourites.

    Served with brown rice.
    Absolutely delicious.
