Any time you use prosciutto, herbs, wine, tomatoes and garlic together in a sauce, you know the outcome is going to be good.
Most Chicken Cacciatore recipes use chicken thighs. Although they taste great, fatty chicken thighs are not the best for folks who are trying to keep their calories in check. That's why we've used lean chicken breasts in this recipe which means that each serving is only 242 calories! How good is that?
Not everyone is a fan of olives, so if you're not keen, you can don't have to add them to the dish, they're not integral to the tasty flavours.

Heat the olive oil in a large pan over a medium heat and add the onions, garlic, green pepper, carrot, mushrooms and prosciutto and gently fry for around 5 minutes.
Add the chicken breasts and cook for a few minutes on each side until browned.
Add the wine and simmer for a few minutes until it's reduced by around a third.
Add the chopped tomatoes, stock, mixed herbs, salt and pepper. Cover, reduce the heat to low and simmer for 30 minutes.
Remove the lid and add the olives. Simmer uncovered for a final 10 minutes.
Serve.
