Tip the sliced carrots into the pan and pour in the chicken stock. Give everything a good stir to combine.
Bring the soup to a gentle simmer, cover with a lid, and cook for 20–25 minutes, or until the carrots are completely soft and tender.
Blend the soup until smooth using a stick blender (or transfer to a blender in batches). Stir in the shredded chicken and gently heat through for a few minutes.
