Ingredients

1 tbsp oil

1 onion, chopped

1 pepper, chopped

500g 5% beef mince

15g garlic, puree or very finely chopped

1 tsp mixed herbs

30g red pesto

400g chopped tomatoes

1/2 tsp salt

100 ml water

80g low fat cream cheese

Instructions

Heat some oil in a pan and cook the onion and pepper until they’re softened and smell amazing.

Add the mince and cook it until it’s beautifully browned and slightly crispy. Trust me, don’t rush this step – it’s where the magic happens.

Add the garlic and let it cook for about 30 seconds. Just long enough to make your whole kitchen smell incredible.

Stir in the mixed herbs, red pesto, chopped tomatoes, salt, and water. Let it simmer for 10 minutes to thicken up and let the flavours meld.

 Just before serving, stir in the cream cheese until it melts into the sauce like a dream.

Toss with your favourite pasta, sprinkle with parmesan (if you’re feeling fancy), and dig in.
