Ingredients
- 1 tbsp olive oil
- 600 g chicken breasts, chopped
- 150 g smoked bacon medallions, chopped
- 1 medium onion, finely chopped
- 5 g garlic, finely chopped
- 100 ml vodka
- 400 g chopped tomatoes
- 1/4 tsp salt
- 120 ml half-fat crème fraîche
- Freshly grated Parmesan cheese, to serve
- Fresh basil leaves, for garnish
- Salt and freshly ground black pepper, to taste
Instructions
Heat the olive oil in a large pan on a high heat and fry the chicken for a few minutes to get some colour on it. Remove and set aside.
Reduce the heat to medium and add the bacon and onion.
Cook these for about 5-10 minutes to really allow them to release lots of flavour and to get the bacon to crisp up.
Add the garlic and fry for a further 30 seconds.
Add vodka and cook it for about 2-3 minutes. This is to allow the alcohol to burn off.
Return the chicken to the pan and add the chopped tomatoes and salt.
Cover and simmer for 10 minutes with the lid on. Then remove the lid and simmer for another 5 minutes.
Add the basil and crème fraiche, a splash of pasta water if needed stir through and serve.
