Sweet Potato Stovies

I've created a Stovies recipe, with a twist, using sweet potatoes in place of the traditional white potato. The recipe for stovies also has a couple of other ingredients included that you might not find in a normal recipe which gives this dish a really delicious flavour.

This easy recipe for sweet potato stovies takes hardly any time to prepare, it can be scaled to feed more hungry folks and it can be easily frozen.

Ingredients

  • 1 tsp olive oil
  • 1 red onion, finely diced
  • 10 g garlic, pressed
  • 30 g tomato puree
  • 500 g 5% fat steak mince
  • 175 ml red wine
  • 20 ml Worcestershire sauce
  • 1 tsp mixed herbs
  • 900 g sweet potatoes, peeled and quartered
  • 200 ml beef stock.

Instructions

Heat the olive oil in a large pan over a medium heat and add the onion and gently fry for a few minutes. Add the garlic and tomato puree and fry for a further minute before adding the mince to the pan and cooking until it has browned.

Add the wine and simmer until it's reduced by about 1/3 in volume.

Add all of the remaining ingredients.

Cover with a lid, reduce to a low simmer and cook for about 60 minutes.

When it's ready, remove the lid and mash with a spoon so everything is combined. Serve.
