Unless you're some kind of pro chilli connoisseur, you've probably not heard of a white chicken chilli before, let alone cooked one? Don't worry, neither had we until recently!
Heat the oil in a large pan on a medium heat and add the onions, garlic, green chilli and fry for around 5 minutes.
Add the chicken and cook for around 5 minutes more or until the chicken is starting to brown.
Add all of the remaining ingredients, reduce the heat to medium/low and simmer, uncovered, for around 1 hour.
Serve and garnish with parsley and fresh chilli (if you like it hot).
