This is a winner of a recipe that was in the 3rd High Protein Handbook which has been modified to be done in the slow cooker.
Heat the coconut oil in a large frying pan and fry the garlic, ginger and onion along with the star anise for a few minutes until the onions start to turn translucent.
Tip the veg into a slow cooker and add all of the other ingredients and mix through.
Cover with the lid and cook on low for around 8 hours.
