Now before we go any further, we're not big 'low-carbers', in fact we love our carbs (read this article to learn how much carbohydrate to eat for fat loss), we're also not against gluten either (more about that and the paleo diet here) it just so happens that this recipe is low-carb and gluten free.

The downside of the ridiculously low levels of carbohydrate (only 4g per muffin) is that the fat content of these muffins is rather high (20g) due to the crushed almonds, butter and eggs in the mixture. However this combo does make for a deliciously rich, moist muffin that will certainly help boost your fat macros. Enjoy!

 200 g almond flour or crushed almonds
 ¼ tsp salt
 4 eggs
 80 ml water
 2 tsp baking powder
 100 g butter
 10 g Splenda (sugar substitute)
 2 tsp cinnamon

Preheat the your oven to 180 degrees Celsius.

Mix all the ingredients together either by hand or using a mixer.

Grease a muffin/cupcake pan and evenly divide the mixture.

Bake for about 25 Minutes
Notes: These taste amazing! Add sultanas, nuts or anything else to the mixture before baking if you so wish.
