Lou’s Lush Lentil Curry

This is a delicious low calorie lentil curry that is suitable for anyone following a vegetarian or vegan diet.

Lentil curry

 1 tbsp coconut oil
 2 onions, thinly sliced
 10 g ginger, pressed
 10 g garlic, pressed
 200 g red lentils, rinsed
 500 ml vegetable stock
 1 tsp cumin
 1 tsp chilli powder
 1 tsp garam masala
 400 g chopped tomatoes
 400 ml light coconut milk

Heat the coconut oil in a large pan on a medium heat and add the onions and cook for around 10 minutes until softened.


Add the garlic and ginger and cook for further 2 minutes.


Add all of the remaining ingredients and mix through.


Reduce the heat to low, cover and simmer for 30 minutes stirring occasionally.


Remove the lid and simmer for a final 15 minutes.
