It’s so popular because it’s ridiculously easy to make and it tastes delicious. That’s why we’ve decided to create another dish in the jambalaya family. Introducing the Italian Chicken Jambalaya!

Just like it’s big brother, this jambalaya is a healthy one pot recipe that the whole family will love. It uses simple ingredients and it has a delicious, rich, Mediterranean flavour. If, for some reason, you don’t have fennel in your cupboard, don’t skip it. Nip down to the shop and add it to your basket as you’ll need it to add a wonderful fragrant spice to this dish and many other Italian dishes too.

 ¼ tsp olive oil
 ¼ red or green pepper, diced
 ¼ onion, diced
 ¾ garlic cloves, crushed
 ¼ tsp fennel seeds
 125 g chicken breast
 75 g brown rice (dry weight)
 100 g can of chopped tomatoes
 ½ tbsp mixed herbs
 15 g sun-dried tomato
 175 ml stock
 Pinch of black pepper
 Fresh basil to serve

Heat a large pan on the hob on a medium heat and add the olive oil. Add the onions, garlic, peppers and fennel seed and gently fry for 5 Minutes

Add the chicken and cook for a few more minutes until the chicken is lightly browned.

Add the uncooked rice, chopped tomatoes, mixed herbs, stock, black pepper and sun-dried tomatoes to the pan and give everything a good mix through.

Reduce the heat down to low and simmer, uncovered for 30- 40 Minutes until the majority of the liquid has been absorbed and the rice is cooked though.
