Packed with the carbohydrate goodness of sweet potato with a fiery chorizo flavour.
Prep time: 10 min
Cook time: 25 min
1. Add onions, garlic, carrots, peppers and chorizo and the curry and chilli powder to a large pan and fry gently.
2. Once cooked add the sweet potato, stock and salt and pepper.
3. Simmer for 12-15mins
4. Blend everything then serve. Delicious!
2 carrots chopped
2 red onions quartered
2 green peppers
200g chorizo sausage
2 garlic gloves finely chopped
1 tsp curry powder
1 tbs chilli powder
800g sweet potato chopped
salt and freshly ground black pepper
